Well, because you deleted 'everything Firefox'! If you deleted all of it, it'd be like a new installation.
Also, if Firefox 3 has a new format for its preferences/profile (and it does, for some of it), then 'rolling back' just the application won't magically fix that. You'd have to bring over that data, too.
