Backup only selected folders

Sorry but I am really dump about this stuff.

I can’t figure out how to get done what I want done using Super Duper.

All I want to do is backup my Parallels Virtual Disk and my Entourage Data base.

For the Parallels Disk I don’t need it to be stopped to backup, so I been told.
For the Entourage db I need to stop the program, back it up, then restart.

Can I automate this?

If I can’t automate this I guess I need to know how to select just the folders I want backed up, which I can’t seem to figure out. It doesn’t appear to as easy as just selecting them from Finder or a file list. I am sure it involves this scripting thing which I don’t have a clue about.

Any advice?
